Ingredients
- 1/4 cup all purpose flour
- 1 tsp salt
- 3/4 tsp black pepper
- 3 lbs skinless chicken drumsticks and thighs
- 2 tbsps olive oil
- 1 large onion
- 1/2 lb mushroom sliced
- 1 cup chicken broth
- 1 cup Vino Noceto Rosato Di Sangiovese
- 2 medium tomatoes chopped
- 2 cloves of garlic
- 1/4 tsp red pepper flakes
- 1/4 tsp oregano
- 1 tbsp anchovy fillets, finely chopped
- 1 tbsp parsley
Directions
In small bowl, mix flour and 1/2 tsp each salt and pepper. In large mixing bowl, toss chicken pieces with oil. Add flour mixture from small bowl to mixing bowl and toss to coat chicken.
Place chicken in 6 qt or larger slow cooker. Add onion, mushrooms, broth, wine, tomatoes, garlic, red pepper, oregano and remaining salt and pepper. Cook on low for 6 hours. Just before serving, stir in anchovy fillets and parsley. Makes 4 servings. Serve with Noceto Linstaedt Barbera.
